PEA AND GOAT’S CHEESE FRITTATA
Pea and goat’s cheese pair beautifully, and work really well together in this filling and flavoursome frittata. Use goat’s cheese with a rind so that it holds it shape.
Ingredients
40g goat’s cheese
Handful frozen peas
Two eggs
S+P to taste
Drizzle of olive oil
Method
Preheat your grill to medium
Beat the eggs in a bowl and add the peas and salt and pepper. Cube the goats’s cheese.
Warm the olive oil in a small frying pan and add the egg and pea mixture. Scatter the goat’s cheese over the top.
Cook over a low to medium heat until the bottom and the sides of the frittata are set, then transfer underneath the grill and cook until the top is set and the cheese has gone good and oozy.
Transfer to a plate and eat, this works well alongside a crisp green salad if you want a slightly larger meal.
