HERBY AVOCADO PASTA

If you’re not sure what to make for dinner tonight, this herby avocado pasta is super speedy and packed full of goodness. The avocado gives it a lovely creaminess without being chock full of butter or cream. I’d love to know if you give it a go so don’t forget to tag me in your recreations on Instagram!

Ingredients (serves 2)
200g wholewheat spaghetti
1 avocado
Juice of half a lemon
Bunch of coriander
Bunch of parsley
Garlic clove
50g cashews
Dried chilli flakes (optional)

Method
Cook the pasta according to the packet instructions. Whilst the pasta is cooking, blend all the other ingredients other than the chilli flakes together into the pasta sauce. If it’s a bit on the thick side you can loosen it with some of the cooking water from the pasta. Mix with the cooked and drained pasta, and sprinkle the chilli flakes on top if using. It’s as simple as that!
